Prepare the Biscuit Dough
In a bowl, mix the flour, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the cheddar and scallions. Add buttermilk gradually until the dough comes together.

Bake the Biscuits
Preheat the oven to 425°F (220°C). Turn the dough onto a floured surface and gently knead it a few times. Roll out to about 1 inch thick, cut into rounds, and place on a baking sheet. Bake for 15-20 minutes until golden.

Marinate the Chicken
In a bowl, combine buttermilk, paprika, cumin, cinnamon, salt, and black pepper. Add chicken pieces and coat well. Cover and refrigerate for at least 2 hours, preferably overnight.

Heat oil in a large skillet over medium-high heat. Dredge marinated chicken in flour and fry until golden brown and cooked through, about 15-20 minutes. Drain on paper towels.

In a large bowl, combine the grated carrots, diced preserved lemons, olive oil, and parsley. Season with salt and black pepper to taste. Toss everything together well.

In a bowl, mix the crumbled feta cheese, red chili flakes, olive oil, and lemon juice until well combined. Adjust seasoning if needed.
