Preparation
Prepare the Potatoes
Peel the russet potatoes and cut them into thick fries. Soak them in cold water for 30 minutes to remove excess starch.
Make the Batter
In a large bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until you achieve a smooth batter.
Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).
Fry the Potatoes
Drain the soaked fries and pat them dry. Dip each fry into the batter, allowing excess to drip off, then carefully drop them into the hot oil. Fry in batches until golden brown and crispy, about 5-7 minutes.
Prepare Harissa Sauce
In a small bowl, mix together harissa paste, mayonnaise, and lemon juice until well combined. Adjust seasoning to taste.
Serve
Once the fries are crispy, remove them from the oil and drain on paper towels. Serve hot with the harissa special sauce on the side.
