Prepare the Cucumber Kimchi

Slice the cucumber thinly and sprinkle with salt. Let it sit for 15 minutes to draw out moisture. Rinse and drain. Mix with a little soy sauce, sesame oil, and sliced green onions. Set aside.

Cook the Mushrooms

In a large pan, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant. Add the sliced mushrooms and cook until they are tender, about 5-7 minutes.

Add the Sauce

In a small bowl, mix together the soy sauce and brown sugar. Pour this sauce over the cooked mushrooms, stirring well to coat. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Serve

Plate the mushroom bulgogi, top with crushed peanuts and sesame seeds. Serve the cucumber kimchi on the side.
