Crispy Marinated Tofu and Vegetables

Prepare the Tofu

Press the tofu to remove excess moisture. Cut it into bite-sized cubes.

Marinate the Tofu

In a bowl, mix soy sauce, maple syrup, sesame oil, minced garlic, and grated ginger. Add the tofu cubes and toss gently to coat. Marinate for at least 30 minutes.

Cook the Tofu

Heat a non-stick skillet over medium-high heat and add peanut oil. Once hot, add the marinated tofu cubes. Cook until they are golden and crispy on all sides, about 8-10 minutes. Remove from the skillet and set aside.

Sauté the Vegetables

In the same skillet, add the sliced squash and shiitake mushrooms. Sauté for 3-4 minutes until slightly charred. Add the Chinese broccoli and continue to cook for another 3-4 minutes until tender. Season with salt and pepper.

Combine and Serve

Return the crispy tofu to the skillet with the vegetables. Toss gently to combine. Serve hot, garnished with toasted sesame seeds.
