Prepare the Chicken
Preheat your oven to 375°F (190°C). Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness. Season both sides with salt and pepper.
Assemble the Cordon Bleu
Lay one slice of prosciutto and one slice of Swiss cheese on each chicken breast. Fold the chicken over to enclose the filling and secure with toothpicks if necessary.
Coat the Chicken
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with bread crumbs. Dredge each chicken piece in flour, dip in egg, and then coat with bread crumbs.
Cook the Chicken
Heat olive oil in a large skillet over medium heat. Add the breaded chicken and cook until golden brown on both sides, about 4-5 minutes per side. Transfer to a baking dish and bake in preheated oven for 20-25 minutes or until cooked through.
Prepare the Rice Pilaf
In a saucepan, bring chicken broth to a boil. Add rice, cover, and reduce heat to low. Cook for 15-18 minutes until rice is tender and liquid is absorbed.
Serve
Place a piece of Cordon Bleu on a plate, spoon Herb Supreme Sauce over it, and serve with rice pilaf and sautéed green beans on the side.
