    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for another 10 minutes. Fluff with a fork and let cool.

    Fry the Wontons

    In a deep frying pan or pot, heat oil over medium heat. Cut wonton sheets into quarters and fry them in batches until golden brown and crispy. Remove and drain on paper towels.

    Prepare Toppings

    Dice the cucumber and avocado. Prepare spicy tuna and crab meat if not already done. Chop the green onions.

    Assemble Sushi Nachos

    On a large plate or platter, spread a layer of fried wontons, followed by a layer of cooled sushi rice. Top with spicy tuna, crab meat, cucumber, and avocado. Drizzle with spicy mayo and eel sauce.

    Garnish and Serve

    Add dollops of wasabi and pickled ginger on top. Sprinkle with green onions and sesame seeds. Serve immediately.
