Method

Prepare the Wings

  1. 1

    Marinate the Wings

In a large bowl, combine chicken wings with olive oil, smoked paprika, garlic powder, salt, and black pepper. Toss well to coat and let marinate for at least 30 minutes.

  2. 2

    Smoke the Wings

Preheat your smoker to 225°F (107°C). Place the marinated wings in the smoker and smoke for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).

Prepare the Dressing

  1. 3

    Mix the Dressing

In a mixing bowl, combine mayonnaise, sour cream, bleu cheese, lemon juice, garlic powder, salt, and black pepper. Mix until smooth and refrigerate until serving.

Prepare the Veggies

  1. 4

    Cut and Serve

Slice the carrots and celery into sticks for serving alongside the wings.

Serve

  1. 5

    Coat the Wings

Once the wings are smoked, you can toss them in buffalo sauce or honey BBQ sauce, depending on your preference.

  2. 6

    Plate the Dish

Serve the smoked chicken wings with the homemade bleu cheese dressing and veggie sticks on the side.
