Prepare the Shrimp
Rinse the shrimp under cold water and pat them dry with paper towels. Set aside.

Make the Batter
In a large bowl, whisk together the flour, cornstarch, Cajun seasoning, baking powder, salt, and black pepper.

Combine Dry and Wet Ingredients
Pour the egg mixture into the dry ingredients and mix until just combined. The batter should be thick but pourable.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Dip each shrimp into the batter, allowing excess to drip off, then carefully place them into the hot oil. Fry in batches, without overcrowding, until golden brown and crispy, about 3-4 minutes per batch.

Drain and Serve
Remove the fried shrimp from the oil and drain on a paper towel-lined plate. Serve hot with orange marmalade on the side for dipping.
