Prepare the Puff Pastry
Preheat the oven to 400°F (200°C). Roll out the puff pastry sheets and cut them into circles. Place on a baking sheet and bake for 15-20 minutes or until golden brown.

Make the Whipped Cream
In a mixing bowl, whip the heavy cream until soft peaks form. Set aside in the refrigerator.

Prepare the Bananas
Slice the bananas into thick rounds and set aside.

Make the Caramel Sauce
In a skillet, melt the butter over medium heat. Add the brown sugar, cinnamon, and nutmeg, stirring until the mixture is bubbly. Carefully add the Captain Morgan rum and cook for an additional 2 minutes.

Sauté the Bananas
Add the sliced bananas to the skillet with the caramel sauce and gently toss to coat. Cook for about 2-3 minutes until the bananas are warmed through.

Assemble the Dish
On each puff pastry shell, add a scoop of homemade vanilla ice cream, top with the sautéed bananas and drizzle with the caramel sauce. Finish with a dollop of whipped cream.
