Prepare the Tofu
Drain the tofu and press it between paper towels to remove excess moisture. Cut the tofu into bite-sized cubes.

Coat the Tofu
In a bowl, toss the tofu cubes in cornstarch until evenly coated.

Fry the Tofu
Heat vegetable oil in a large pan over medium-high heat. Once hot, add the tofu cubes and fry until golden brown and crispy, about 5-7 minutes. Remove from oil and drain on paper towels.

Make the Vinegar Slaw
In a large bowl, combine shredded cabbage, carrot, apple cider vinegar, sugar, salt, and pepper. Toss well and let it marinate for at least 15 minutes.

Prepare the Special Sauce
In a small bowl, mix mayonnaise, ketchup, garlic powder, and paprika together until well combined.

Assemble the Topher Boy
On a serving plate, layer the crispy fried tofu, bourbon BBQ sauce, vinegar slaw, shredded lettuce, tomato slices, and pickles. Drizzle with the special sauce and serve.
