Make the Hoecakes
In a bowl, mix cornmeal, baking powder, and salt. In another bowl, whisk together buttermilk and egg. Combine both mixtures until just blended. Heat a skillet over medium heat and pour 1/4 cup of batter for each hoecake. Cook until golden brown, about 3-4 minutes per side.

Prepare the Creamy Slaw
In a bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, and sugar. Toss until well coated and set aside.

Cook the Soup Beans
Soak the soup beans overnight. Drain and rinse them, then place in a pot with enough water to cover. Simmer until tender, about 1-2 hours.

Assemble the Dish
Shred the smoked pork and place it on the hoecake. Top with sliced onions, pickles, and creamy slaw. Serve with a cup of soup beans on the side.
