    Prepare the Pork

    Rub the pork shoulder with salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper. Let it marinate for at least 1 hour or overnight in the refrigerator for best results.

    Smoke the Pork

    Preheat your smoker to 225°F (107°C). Place the seasoned pork shoulder in the smoker and cook for about 8-10 hours, or until the internal temperature reaches 195°F (90°C).

    Shred the Pork

    Once done, remove the pork from the smoker and let it rest for 30 minutes. Then, using two forks, shred the pork into bite-sized pieces.

    Mix with BBQ Sauce

    In a large bowl, combine the shredded pork with the bourbon BBQ sauce. Mix well until the pork is fully coated.

    Prepare the Sandwiches

    Slice the large onion into thin rings. Toast the buns, if desired. Assemble the sandwiches by placing a generous amount of pulled pork on the bottom half of each bun, adding onions and pickles on top, then closing with the top half of the bun.
