1. Prepare the Potatoes

Boil the new potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.

2. Make the Herb Butter

In a small bowl, mix 4 tablespoons of butter with smoked paprika, chopped parsley, salt, and black pepper. Set aside.

3. Sear the Trout

In a large skillet, melt the remaining 2 tablespoons of butter over medium-high heat. Season the trout fillets with salt and black pepper. Place the fillets skin-side down in the skillet and cook for 4-5 minutes until the skin is crispy.

4. Finish Cooking the Trout

Carefully flip the trout fillets and cook for an additional 2-3 minutes until cooked through. During the last minute, add the herb butter to the skillet and spoon it over the trout.

5. Prepare the Vegetables

While the trout is cooking, steam or sauté the vegetable of the day until tender.

6. Serve

Plate the trout alongside the buttered new potatoes and the vegetable of the day. Drizzle any remaining herb butter over the dish before serving.
