Preparation and Assembly

Prepare the Pulled Pork
Rub the pork shoulder with salt and pepper. Place it in a slow cooker with bourbon and BBQ sauce. Cook on low for 8 hours until tender. Shred the pork with two forks.

Make the Bourbon Barrel Beer Cheese
In a saucepan, combine cream cheese, cheddar cheese, beer, and bourbon. Stir over low heat until melted and smooth. Adjust seasoning with salt and pepper.

Prepare the Fried Pickles
If using store-bought fried pickles, heat them according to package instructions. Alternatively, fry sliced pickles until golden brown in hot oil.

Assemble the Kentucky Boy
On each bun, layer shredded lettuce, pulled pork, crispy fried pickles, bourbon barrel beer cheese, red onion slices, and a drizzle of special sauce. Top with the other half of the bun and serve.
