Gradually whisk in the milk, stirring constantly until the mixture thickens. Remove from heat and stir in the shredded white cheddar cheese until melted. Season with salt and black pepper to taste.

Toast the Bread
Preheat the oven to 400°F (200°C). Place the slices of white bread on a baking sheet and toast in the oven for about 5 minutes or until golden brown.

Assemble the Hot Brown
On each slice of toasted bread, layer the sliced roasted turkey and country ham. Pour the warm Mornay sauce over the top.

Add Toppings
Top each open-faced sandwich with crumbled bacon and sliced tomatoes.

Return the assembled Hot Brown sandwiches to the oven and bake for an additional 10-15 minutes, or until the sauce is bubbly and the edges are golden.

Remove from the oven and serve hot, garnished with additional black pepper if desired.
