Prepare the Shrimp or Oysters
Rinse the shrimp or oysters under cold water and pat them dry with paper towels.

Batter the Seafood
In a bowl, combine the Weisenberger flour and cajun seasoning. In another bowl, pour the buttermilk. Dip each shrimp or oyster in the buttermilk, then dredge in the seasoned flour to coat.

Fry the Seafood
Carefully place the battered shrimp or oysters in the hot oil and fry for 3-4 minutes or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

Assemble the Po-Boy
Cut the French bread or hoagie rolls in half lengthwise. Spread remoulade sauce on both sides, then layer with shredded lettuce, sliced tomato, pickles, and the fried shrimp or oysters. Add hot sauce to taste.

Serve
Close the sandwich, slice in half, and serve immediately with extra remoulade on the side if desired.
