Prepare the Breading
In a mixing bowl, combine Weisenberger flour, cornmeal, salt, black pepper, paprika, and garlic powder. Mix until well combined.

Soak the Seafood
Pour buttermilk into a separate bowl. Dip the oysters or shrimp into the buttermilk, ensuring they are coated thoroughly.

Coat the Seafood
Remove the seafood from the buttermilk and let excess drip off. Dredge in the seasoned flour mixture, making sure they are fully coated.

Heat the Oil
In a deep fryer or large heavy pot, heat vegetable oil to 350°F (175°C).

Fry the Seafood
Carefully place the coated oysters or shrimp into the hot oil in batches. Fry until golden brown, about 2-3 minutes for shrimp and 3-4 minutes for oysters. Remove and drain on paper towels.

Serve the fried oysters or shrimp with hushpuppies, fries, creamy slaw, and remoulade on the side.
