Preparation Steps

Prepare the Remoulade
In a bowl, mix together mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Set aside.

Prepare the Coleslaw
In a large bowl, combine shredded cabbage and carrots. Toss with a bit of salt and pepper, and set aside.

Prepare the Hushpuppies
In a mixing bowl, combine hushpuppies mix and water until well blended. Let sit while preparing the catfish.

Season the Flour
In a shallow dish, combine Weisenberger flour and cajun seasoning.

Fry the Catfish
Heat oil in a deep fryer or large pot to 350°F (175°C). Dredge catfish filets in the seasoned flour, then carefully place in the hot oil. Fry for 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Fry the Hushpuppies
Drop spoonfuls of the hushpuppy batter into the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Cook the Fries
In the same oil, cook french fries according to package instructions or until golden and crispy.
