Chicken Marinade

    Prepare the Marinade

    In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.

    Marinate the Chicken

    Place the boneless chicken breast in a resealable plastic bag or a shallow dish and pour the marinade over it. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours.

    Prepare the Vegetables

    Wash and dice the tomatoes into bite-sized pieces. Peel the cucumber, slice it in half lengthwise, and then slice into half-moon shapes.

    Cook the Chicken

    Preheat a grill or skillet over medium heat. Remove the chicken from the marinade and cook for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Let it rest for a few minutes before slicing.

    Assemble the Salad

    In a large serving bowl, combine the diced tomatoes, sliced cucumber, and crumbled feta cheese. Top with the sliced marinated chicken.
