Preparation

    Prepare the Marionberry Base

    In a medium saucepan, combine the marionberries, sugar, water, and grated ginger. Bring to a boil over medium heat, stirring until the sugar dissolves.

    Simmer and Cool

    Reduce heat and let the mixture simmer for about 10 minutes. Remove from heat and allow to cool to room temperature. Strain the mixture through a fine-mesh sieve to remove the solids, pressing the berries to extract as much liquid as possible.

    Add Lemon Juice

    Stir in the lemon juice into the strained marionberry liquid. Taste and adjust sweetness if needed.

    Chill the Mixture

    Refrigerate the marionberry mixture for at least 2 hours or until completely chilled.

    Churn the Sorbet

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Freeze

    Transfer the sorbet to an airtight container and freeze for at least 4 hours or until firm.

    Serve with Vanilla Gelato

    Scoop the wild ginger marionberry sorbet into bowls and swirl in vanilla gelato to serve.
