Prepare the Duck
Rinse the duck under cold water and pat it dry with paper towels. Rub salt and black pepper all over the duck, including inside the cavity.
Marinate the Duck
In a bowl, mix the minced garlic, sliced ginger, soy sauce, hoisin sauce, honey, and rice wine. Coat the duck with the marinade, making sure to get it inside the cavity as well. Let it marinate in the refrigerator for at least 2 hours, preferably overnight.
Preheat the Oven
Preheat your oven to 375°F (190°C).
Roast the Duck
Place the marinated duck on a roasting rack in a roasting pan. Roast in the preheated oven for about 1.5 to 2 hours, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
Prepare Garnish
While the duck is roasting, chop the scallions. Set aside for garnish.
Serve
Once the duck is done, remove it from the oven and let it rest for 10 minutes. Carve the duck and serve with chopped scallions on top.
