    In a large pot, bring salted water to a boil. Add egg noodles and cook according to package instructions until al dente. Drain and set aside.

    In the same pot, add a little oil over medium heat. Add diced chicken and cook until browned. Stir in curry paste and cook for another minute until fragrant.

    Pour in the coconut milk and vegetable broth, and bring the mixture to a gentle simmer. Let it cook for about 10 minutes.

    Stir in soy sauce and lime juice. Adjust seasoning to taste.

    Add cooked egg noodles to the soup and mix gently. Serve hot, garnished with fresh coriander, sliced scallions, fried shallots, sliced chilies, and crispy noodles.
