Marinate the Sea Bass

In a bowl, combine turmeric powder, fish sauce, minced garlic, and sliced shallots. Add sea bass fillets and coat well. Cover and let marinate in the refrigerator for at least 30 minutes.

Prepare for Cooking

Heat vegetable oil in a wok or large skillet over medium-high heat.

Cook the Sea Bass

Add the marinated sea bass fillets to the hot oil. Cook for about 4-5 minutes on each side or until crispy and cooked through.

Add Fresh Herbs

Once the sea bass is cooked, add the chopped dill, mint, cilantro, and Thai basil to the wok. Toss everything together and cook for an additional 1-2 minutes until the herbs are fragrant.

Transfer the Cha Ca to a serving platter and serve immediately with lime wedges on the side.
