    Prepare the Tofu

    Press the tofu to remove excess moisture. Cut into small cubes.

    Cook the Noodles

    Soak the rice noodles in warm water for about 20 minutes until softened. Drain and set aside.

    Fry the Tofu

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu cubes and fry until golden brown on all sides. Remove and set aside.

    In the same skillet, add another tablespoon of vegetable oil. Add minced garlic and sauté for about 1 minute until fragrant.

    Add the drained noodles, fried tofu, bean sprouts, and green onions to the skillet. Stir well to combine.

    In a small bowl, mix together peanut butter, soy sauce, brown sugar, and lime juice until smooth. Pour over the noodle mixture and toss to coat.
