    Prepare the Marinade

    In a bowl, combine the chopped coriander, minced garlic, soy sauce, lime juice, olive oil, ground cumin, ground coriander, salt, and black pepper. Mix well to create a marinade.

    Marinate the Mushrooms

    Clean the shiitake mushrooms and place them in the marinade. Ensure the mushrooms are well-coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.

    Prepare the Skewers

    If using wooden skewers, soak them in water for at least 20 minutes to prevent burning. Preheat the grill or grill pan to medium-high heat.

    Skewer the Mushrooms

    Thread the marinated shiitake mushrooms onto the skewers, leaving a little space between each mushroom for even cooking.

    Grill the Skewers

    Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the mushrooms are tender and slightly charred.
