    Prepare the Marinade

    In a bowl, combine minced garlic, fresh coriander, soy sauce, lime juice, cumin, turmeric, and black pepper. Mix well to form a marinade.

    Marinate the Mushrooms

    Clean the shiitake mushrooms and remove the stems. Add the mushrooms to the marinade and toss to coat evenly. Let them marinate for at least 30 minutes.

    Skewer the Mushrooms

    Thread the marinated mushrooms onto skewers, making sure they are securely placed.

    Grill the Skewers

    Preheat a grill or a grill pan over medium-high heat. Grill the skewers for about 5-7 minutes on each side, or until they have a nice char and are cooked through.

    Serve

    Remove the skewers from the grill and serve hot with chili vinegar dipping sauce and house-made pickles.
