    Prepare the Marinade

    In a bowl, combine chopped coriander, minced garlic, soy sauce, lime juice, brown sugar, cayenne pepper, and salt. Mix well until the sugar is dissolved.

    Marinate the Mushrooms

    Clean the shiitake mushrooms and place them in the marinade. Make sure the mushrooms are well coated. Cover and refrigerate for at least 30 minutes.

    Prepare Skewers

    If using wooden skewers, soak them in water for about 30 minutes to prevent burning. Thread the marinated mushrooms onto the skewers.

    Grill the Skewers

    Preheat a grill or grill pan over medium heat. Grill the skewers for about 5-7 minutes, turning occasionally, until the mushrooms are tender and slightly charred.

    Prepare Chili Vinegar Dipping Sauce

    In a small bowl, mix together 2 tablespoons of vinegar, 1 teaspoon of chili flakes (adjust to taste), and a pinch of salt. Stir well.

    Serve

    Remove the skewers from the grill and serve hot with the chili vinegar dipping sauce on the side.
