Prepare the lentils
Rinse the red lentils under cold water until the water runs clear. Drain and set aside.

Add spices and lentils
Stir in the coriander powder and turmeric powder. Add the rinsed lentils and vegetable broth (or water). Bring to a boil.

Simmer
Reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes, or until the lentils are soft and creamy. Stir occasionally and add salt to taste.

Prepare the garnish
In a small pan, heat a little coconut oil. Add the fresh curry leaves and dried red chilies. Fry for about 1-2 minutes until the leaves are crispy.

Serve
Ladle the dahl into bowls and top with the fried curry leaves and chilies. Enjoy with rice or bread.
