Our house specialty. Succulent fresh duck spiced with cinnamon and star anise. Served with steamed bao buns, sichuan peppercorn salt and sweet plum sauce. (can not be made gluten free)

Prepare the Duck

    Season the Duck

    Rub the whole duck with salt, black pepper, and insert the cinnamon sticks, star anise, garlic, and ginger into the cavity of the duck.

    Roast the Duck

    Preheat the oven to 375°F (190°C). Place the duck on a roasting rack in a roasting pan. Roast for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).

Make Sichuan Peppercorn Salt

    Prepare the Salt Mix

    In a dry skillet over medium heat, toast the Sichuan peppercorns until fragrant. Grind them with sea salt in a mortar and pestle or spice grinder.

Serve

    Plate the Dish

    Once the duck is fully cooked, let it rest for 10 minutes. Carve the duck and serve with steamed bao buns, Sichuan peppercorn salt, and sweet plum sauce.
