Cooking Instructions

  1. 1

    Prepare the Vegetables

Chop the eggplant, red bell pepper, cabbage, and okra into bite-sized pieces. Trim the green beans and set aside.

  2. 2

    Sauté Aromatics

In a large pot, heat a tablespoon of oil over medium heat. Add minced shallots, garlic, and ginger, and sauté until fragrant.

  3. 3

    Add Spices

Stir in chili paste, turmeric powder, salt, and black pepper. Cook for 1-2 minutes.

  4. 4

    Combine Liquids

Pour in the coconut milk and vegetable broth, stirring to combine.

  5. 5

    Add Vegetables

Add the chopped eggplant, bell pepper, green beans, cabbage, okra, and tofu puffs. Bring to a gentle simmer.

  6. 6

    Cook the Curry

Let the curry simmer for 15-20 minutes, stirring occasionally, until the vegetables are tender.
