Pandan Turmeric Rice Cake

Method

Cooking the Curry

    Prepare the Aromatics

    In a large pot, heat a tablespoon of oil over medium heat. Add minced shallots, garlic, lemongrass, and galangal. Sauté until fragrant.

    Add Vegetables

    Stir in the chayote, eggplant, bell pepper, green beans, cabbage, and okra. Cook for about 5 minutes until they start to soften.

    Add Liquids

    Pour in the coconut milk and vegetable broth. Add turmeric powder, salt, and pepper to taste. Bring to a simmer.

    Add Tofu Puffs

    Gently add the tofu puffs to the pot and simmer for another 10-15 minutes until the vegetables are tender.

Making the Pandan Turmeric Rice Cake

    Mix the Ingredients

    In a mixing bowl, combine glutinous rice flour, pandan juice, coconut milk, turmeric powder, sugar, and salt. Stir until smooth.

    Steam the Mixture

    Pour the mixture into a greased cake pan. Steam over boiling water for about 30 minutes until set.

    Cool and Serve

    Allow the cake to cool before slicing. Serve it alongside the Sayur Lodeh.
