    Prepare the Pork

    Cut the pork shoulder and pork belly into large chunks. Season with salt and black pepper.

    Sear the Meat

    In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the pork chunks and sear until browned on all sides. Remove and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion and ginger. Sauté until the onion is translucent.

    Add Spices

    Add the cinnamon stick, cardamom pods, and mace to the pot, stirring for about a minute until fragrant.

    Combine Ingredients

    Return the seared pork to the pot. Add the pickled garlic, soy sauce, chicken broth, and brown sugar. Stir well to combine.

    Slow Cook

    Bring the mixture to a simmer, then cover and reduce heat to low. Cook for 3-4 hours, or until the pork is tender and easily pulls apart.

    Serve

    Once cooked, remove the pork from the pot and shred. Serve with the sauce over rice or with bread.
