Marinade and Topping

Method

Preparation and Cooking

  1. 1

    Marinate the Lamb Chops

In a bowl, combine brandy, Sichuan peppercorns, salt, and black pepper. Add lamb chops, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

  2. 2

    Prepare the Grill

Preheat the grill to medium-high heat. Lightly oil the grill grates with olive oil to prevent sticking.

  3. 3

    Grill the Lamb Chops

Remove lamb chops from the marinade and discard the marinade. Place the chops on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved.

  4. 4

    Prepare the Toppings

While the lamb is grilling, toast the grated coconut in a dry skillet over medium heat until golden brown. Set aside.

  5. 5

    Finish the Dish

Once the lamb chops are done, remove them from the grill and let them rest for a few minutes. Drizzle hoisin sauce over the chops, then sprinkle with toasted coconut and crushed peanuts before serving.
