    Prepare the Noodles

    Cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables

    In a large wok or skillet, heat the vegetable oil over medium-high heat. Add the julienned red bell pepper, carrot, zucchini, and sliced mushrooms. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

    Add the Noodles

    Add the cooked egg noodles to the wok with the vegetables. Pour in the Mongolian chili sauce and toss everything together to combine well, ensuring the noodles are evenly coated.

    Add Peanuts and Season

    Stir in the crushed peanuts and season with salt to taste. Cook for an additional 2-3 minutes, stirring constantly, until everything is heated through.

    Serve

    Remove from heat and transfer to serving plates. Garnish with sliced cucumber and serve immediately.
