    In a bowl, mix together the lemongrass, ginger, shallots, garlic, soy sauce, brown sugar, ground coriander, ground cumin, black pepper, and salt. Stir well until the sugar dissolves.

    Marinate the Chicken

    Add the chicken cubes to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight.

    Prepare the Skewers

    Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken onto the soaked wooden skewers.

    Grill the Skewers

    Brush the skewers with vegetable oil and grill for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
