    Marinate the Chicken

    In a bowl, combine soy sauce, lime juice, minced garlic, and grated ginger. Add chicken thighs and marinate for at least 30 minutes.

    In a saucepan, heat oil over medium heat. Add red curry paste and cook for 1 minute. Stir in peanut butter, coconut milk, and honey. Cook until the sauce thickens, about 5-7 minutes. Season with salt and black pepper.

    In a skillet, heat a little oil over medium-high heat. Remove chicken from marinade and cook for about 5-7 minutes on each side or until cooked through.
