    Prepare the Chicken

    Cut the chicken breast into bite-sized pieces and toss with cornstarch, salt, and pepper. Set aside.

    Heat the Oil

    In a wok or large frying pan, heat the vegetable oil over medium-high heat.

    Cook the Chicken

    Add the chicken to the wok and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.

    Stir-fry the Vegetables

    In the same wok, add the minced garlic, ginger, onions, and bell peppers. Stir-fry for 2-3 minutes until the vegetables are tender.

    Combine Ingredients

    Return the chicken to the wok and add the dried Thai bird chilies and peanuts. Pour in the soy sauce and stir-fry everything together for another 2 minutes.

    Serve

    Remove from heat and serve hot, ideally with steamed rice.
