    Prepare the Chicken

    In a large bowl, combine the chicken thighs with half of the garam masala, cumin, coriander, turmeric, chili powder, and salt. Let it marinate for at least 30 minutes.

    Cook the Aromatics

    In a large skillet or saucepan, heat a tablespoon of oil over medium heat. Add the chopped onions and sauté until golden brown. Add the minced garlic and grated ginger, cooking for another minute.

    Add the Tomatoes

    Stir in the chopped heirloom tomatoes and cook until they break down and become saucy, about 10-15 minutes.

    Cook the Chicken

    Add the marinated chicken to the saucepan and cook until no longer pink, about 5-7 minutes.

    Make it Creamy

    Pour in the coconut milk and the remaining spices (garam masala, cumin, coriander, turmeric, chili powder). Stir well and let it simmer for 15-20 minutes until the chicken is fully cooked and the sauce thickens.

    Garnish with fresh chopped cilantro and serve hot with rice or gluten-free naan.
