Prepare the Chicken
In a large bowl, combine the chicken thighs with salt, pepper, and a tablespoon of garam masala. Let it marinate for at least 30 minutes.

Cook the Onions
In a large skillet or pot, melt the butter over medium heat. Add the chopped onions and sauté until they are translucent, about 5-7 minutes.

Add Garlic and Ginger
Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.

Cook the Chicken
Add the marinated chicken to the skillet and cook until browned on all sides, about 8-10 minutes.

Add Tomatoes and Spices
Add the chopped heirloom tomatoes and the remaining spices (including more garam masala, cumin, and chili powder to taste). Stir well and let it simmer for about 15-20 minutes.

Finish with Cream
Once the chicken is tender and the sauce has thickened, stir in the heavy cream. Allow it to simmer for another 5 minutes.

Serve hot with rice or naan, garnished with fresh cilantro if desired.
