Duck Cooking

Prepare the Duck
Score the skin of the duck breasts in a criss-cross pattern. This helps to render the fat and crisp the skin.

Seasoning
Rub the duck breasts with Sichuan peppercorns, five spice powder, and salt. Let it marinate for at least 30 minutes.

First Cook
Heat vegetable oil in a skillet over medium heat. Place the duck breasts skin-side down and cook until the skin is crispy and golden, about 6-8 minutes. Flip and cook for another 3-4 minutes.

Second Cook
Transfer the duck to a baking sheet and finish cooking in a preheated oven at 180°C (350°F) for about 10-15 minutes, or until the internal temperature reaches 65°C (149°F).

Resting
Remove the duck from the oven and let it rest for 5-10 minutes before slicing.
Serving

Assemble the Dish
Serve the sliced duck on steamed buns. Sprinkle with Sichuan peppercorn salt and drizzle with sweet plum sauce. Enjoy!
