Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

Prepare the Egg Mixture
In a separate bowl, whisk together the egg yolks and granulated sugar until pale and creamy.

Combine Chocolate and Egg Mixture
Gradually add the melted chocolate into the egg mixture, whisking constantly until well combined.

Whip the Cream
In another bowl, whip the heavy cream, vanilla extract, and a pinch of salt until soft peaks form.

Fold the Mixtures
Gently fold the whipped cream into the chocolate mixture until no streaks remain. Be careful not to deflate the whipped cream.

Chill the Mousse
Spoon the mousse into serving dishes and refrigerate for at least 2 hours, or until set.

Top the chilled mousse with whipped cream before serving.
