Marinate the Chicken
In a bowl, combine the chicken breast pieces, lemongrass, ginger, shallots, soy sauce, curry powder, turmeric, coconut milk, and salt. Mix well and let it marinate for at least 1 hour in the refrigerator.

Prepare the Skewers
If using wooden skewers, soak them in water for about 30 minutes to prevent burning. Thread the marinated chicken onto the skewers.

Make the Peanut Dipping Sauce
In a small bowl, mix the peanut butter, coconut milk, lime juice, honey, and a pinch of salt until smooth. Adjust the consistency with more coconut milk if necessary.

Cook the Skewers
Preheat a grill or grill pan over medium-high heat. Grill the chicken skewers for about 4-5 minutes on each side, or until fully cooked and slightly charred.

Serve the chicken satay hot with the peanut dipping sauce and house-made pickles on the side.
