    Prepare the Filling

    In a bowl, combine ground chicken, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix until well incorporated.

    Assemble the Potstickers

    Take a potsticker wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges with water, fold the wrapper in half, and press to seal. Repeat with the remaining wrappers and filling.

    Cook the Potstickers

    In a large skillet, heat vegetable oil over medium-high heat. Place the potstickers in the skillet, flat side down, and cook until the bottoms are golden brown, about 2-3 minutes.

    Steam the Potstickers

    Add 1/4 cup of water to the skillet and cover immediately. Steam the potstickers for about 5 minutes until cooked through.

    Serve

    Remove the potstickers from the skillet and serve hot with black vinegar dipping sauce.
