    Prepare the Rice Noodles

    Soak the thin rice noodles in hot water for about 20 minutes or until softened. Drain and set aside.

    Cook the Tofu

    In a large pan or wok, heat 2 tablespoons of oil over medium-high heat. Add the cubed tofu and fry until golden brown on all sides. Remove and set aside.

    Cook the Chicken

    In the same pan, add another tablespoon of oil if needed. Stir-fry the sliced chicken until cooked through, about 5-7 minutes. Remove and set aside.

    Scramble the Eggs

    In the same pan, crack the eggs and scramble them until just set. Push them to one side of the pan.

    Combine Ingredients

    Add the soaked rice noodles, cooked chicken, and fried tofu back into the pan. Stir to combine.

    Make the Sauce

    In a small bowl, mix together 3 tablespoons of fish sauce, 2 tablespoons of tamarind paste, 1 tablespoon of sugar, and 1 tablespoon of chili sauce. Pour over the noodle mixture and toss to coat.

    Finish and Serve

    Add the crushed peanuts and chopped chives to the pan, toss everything together, and serve immediately.
