    Prepare the Ingredients

    Chop the chicken breast into bite-sized pieces. Dice the carrots and trim the green beans. Slice the scallions, separating the white and green parts.

    Cook the Chicken

    Heat 1 tablespoon of vegetable oil in a large wok over medium-high heat. Add the chicken pieces, season with salt and pepper, and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the wok and set aside.

    Stir-Fry the Vegetables

    In the same wok, add another tablespoon of vegetable oil. Add the diced carrots and green beans, and stir-fry for about 3-4 minutes until slightly tender. Add the white parts of the scallions and continue to stir-fry for another 1-2 minutes.

    Scramble the Eggs

    Push the vegetables to one side of the wok and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.

    Combine Everything

    Add the cooked chicken back into the wok, then add the cooked rice and soy sauce. Stir everything together until well combined and heated through, about 3-5 minutes.

    Garnish with the green parts of the scallions and serve hot.
