    Prepare the Chicken

    In a large bowl, marinate the chicken thighs with garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Let it sit for at least 30 minutes.

    Cook the Chicken

    In a large skillet or pot, heat the vegetable oil over medium heat. Add the marinated chicken and cook until browned, about 5-7 minutes. Remove the chicken and set aside.

    Make the Sauce

    In the same skillet, add the chopped onion, garlic, and ginger. Sauté until the onions are translucent, about 5 minutes. Add the heirloom tomatoes and cook until they break down, about 10 minutes.

    Combine Chicken and Sauce

    Return the chicken to the skillet. Pour in the coconut milk and stir well. Bring to a simmer, cover, and cook for about 20 minutes, stirring occasionally until chicken is cooked through.

    Finish the Dish

    Stir in chopped cilantro before serving. Adjust seasoning if needed.
