Prepare the sauce
In a small bowl, mix the tamarind paste with a little water to thin it out. Set aside.

Cook the aromatics
Heat the vegetable oil in a wok over medium heat. Add the sliced shallots and sauté until they are translucent, about 3-4 minutes.

Add garlic and turmeric
Add the minced garlic and turmeric powder to the wok. Stir-fry for another 1-2 minutes until fragrant.

Cook the prawns
Increase the heat to high and add the prawns to the wok. Stir-fry for about 3-4 minutes until the prawns turn pink and are cooked through.

Add tamarind sauce
Pour the prepared tamarind sauce over the prawns and mix well. Cook for an additional 2 minutes, allowing the prawns to absorb the flavors.

Season and garnish
Season with salt to taste and remove from heat. Garnish with fresh coriander before serving.
