Assam Prawn Recipe
When we say assam we mean irresistibly sour. Prawns are wok-fried in a tamarind sauce with shallots, garlic and turmeric.

Prepare the Prawns
In a bowl, marinate the cleaned prawns with turmeric powder and salt. Set aside for about 10 minutes.

Heat the Oil
In a wok or large skillet, heat the oil over medium-high heat.

Sauté Shallots and Garlic
Add the sliced shallots and minced garlic to the hot oil, and sauté until the shallots are translucent and fragrant.

Cook the Prawns
Add the marinated prawns to the wok and stir-fry for about 3-4 minutes until they turn pink and are cooked through.

Add Tamarind Sauce
Stir in the tamarind paste and mix well to coat the prawns. Cook for another 2 minutes, allowing the flavors to meld.

Garnish and Serve
Remove from heat, garnish with chopped coriander leaves, and serve hot with steamed rice.
