Prepare the Oysters

Rinse the fresh oysters under cold water to remove any sand or debris. Scrub the shells with a brush to ensure they are clean.

Preheat the Oven

Preheat your oven to 450°F (232°C). This high temperature will help roast the oysters effectively.

Make the Butter Mixture

In a small saucepan, melt the unsalted butter over medium heat. Add the minced garlic cloves and sauté until fragrant, about 1-2 minutes. Stir in the Calabrian chili paste and lemon juice, then remove from heat.

Prepare the Oysters for Roasting

Place the cleaned oysters on a baking sheet. Carefully open each oyster with an oyster knife, discarding the top shell. Leave the oyster in the bottom shell.

Add Toppings

Spoon the prepared butter mixture generously over each oyster. Season with salt and black pepper to taste.

Roast the Oysters

Place the baking sheet in the preheated oven and roast the oysters for about 10-12 minutes, or until the edges of the oysters begin to curl and the tops are golden and bubbly.

Garnish and Serve

Remove the baking sheet from the oven. Garnish the roasted oysters with freshly chopped parsley and serve immediately with lemon wedges on the side.
