    Cook the Steak

    In a large pan, heat the olive oil over medium-high heat. Cut the beef chuck steak into bite-sized pieces, season with salt and pepper, and add to the pan. Brown the beef on all sides, then remove and set aside.

    Sauté the Vegetables

    In the same pan, add the chopped onion, diced carrot, and sliced garlic. Cook until the onion is translucent. Add the sliced mushrooms and cook until softened.

    Make the Gravy

    Sprinkle the flour over the vegetable mixture and stir for 1-2 minutes. Gradually pour in the beef stock and ale, stirring constantly until the mixture thickens. Add the thyme, bay leaf, and the reserved beef. Season with salt and pepper.

    Simmer

    Reduce the heat to low and let the mixture simmer for about 30 minutes, until the beef is tender.

    Prepare the Pie

    Preheat your oven to 200°C (400°F). Pour the steak and ale filling into a pie dish. Roll out the puff pastry and cover the filling. Seal the edges and cut slits in the top to allow steam to escape. Brush with egg wash.

    Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown and puffed.

    Let the pie cool for a few minutes before serving. Serve with mashed potatoes.
